Title: Smoked Pork Ham Shanks Floating in a Bowl of Big Lima (Butter-Bean) Soup
Post by: Old Dave on March 19, 2014, 10:23:54 AM
Does anyone ever do any black iron cooking?? Like maybe a camp Dutch oven?

A fellow can make up a pretty good meal off of this old fashioned way of cooking and baking.

This looks like a great dish  Dave . in south africa we cook a lot in a black iron we call it potjiekos .(from wiki)In South Africa, potjiekos , literally translated "small pot food",it is a stew prepared outdoors. It is traditionally cooked in a round, cast iron, three-legged pot, the potjie, descended from the Dutch oven brought from the Netherlands to South Africa in the 17th century and found in the homes and villages of people throughout southern Africa. The pot is heated using small amounts of wood or charcoal or, if fuel is scarce, twisted grass or even dried animal dung.
two weeks ago my daughter made a potjiekos  at a competition .
shanks with dumpling . she go't 3rd  place .

Dave..looks fabulous..love beans cooked in a dutch oven.  I make beans and stuffs in a 4 gallon cauldron that my mom bought for me for my birthday years ago. We were shopping and I asked her for some money and she said she didn't have any. She lied and went back that afternoon to get the cauldron for me for my birthday. The scary part is that the store burned to the ground that night, so I treasure my cauldron. I cook over an open fire on a tripod.  Pam  .☆´¯`•.¸¸. ི♥ྀ.

Dave, this is some good ole Southern comfort food. I ate that many times growing up, cooked in a cast iron dutch oven.

Oooooh yeah boy! I'll take a bowlful of that anytime, and don't forget a plate of cornbread.
