I think a true teppanyaki griddle is iron. This is as close as I can come. It's a stainless steel Little Griddle that just fits on my Broilmaster gas grill.

About every other week a guy comes by my house with a truck full of frozen food and asks us if we want any. I diced up three boneless, skinless lemon and herb seasoned chicken half breasts from a package he left.

Diced chicken breast sizzling in a little corn oil. Corn oil is probably not the best for teppanyaki. Can you suggest a better choice?

The chicken went to the cooler right side while a mix of red pepper, snap peas, carrots, water chestnuts, onions and mushrooms cooked on the left. They were mixed, cooked a bit more and scooped into a serving bowl.

It was a little bland until we gave it a shot of soy sauce. Then—not bad. Not terrific but pretty good. I'm open to suggestions for improving it; especially herbs, spices and the proper oil.

Looks excellent. I love stir fry! Try grape seed oil. My Costco sells a big jug. High smoke point and neutral flavor. How about a couple shots of sriracha?

You're right about the iron griddle (a "teppan" is an iron plate). Japanese generally use soybean oil.
Where are the photos of you juggling utensils, flipping pieces of chicken into your pocket, making onion volcanoes, etc.?

The food looks good, and I love your idea.
Turtle already made good suggestions.
The one thing I can think to add would be that Teppan grills get pretty hot. I don't know how hot you had your grill turned up, but if you can crank it up higher, and/or crank both sides up instead of having a cool side, you might get a better sear on the food.

I flipped a mushroom to Marcia and hit her in the eye. She got a mild burn and an acute case of suspicion.

Yeah, I was disappointed in the lack of sear. It was a cool and breezy night and the griddle was only at around 280°. Left side was wide open and right was at 25%. I could have gotten it higher by closing the lid but I would've had to remove either the griddle handles or the grill upper rack. I was in a hurry to feed Marcia to calm her after the flying mushroom incident. Her mood ring was sizzling.

I remember that video, D.R. Actually it's what inspired me to try stir fry. Like Pappymn, I love stir fry but I rarely get to go to our local Mongolian Barbeque.
Did I mention that she's Norwegian?
Actually, I love everything about her.
One of the things I love a little less than the others is her taste for bland food.
