Title: Sear and hold Coutry Ribs!
Post by: TMB on April 19, 2014, 10:18:37 PM
Well the weather was BEAUTIFUL!!  (Sorry Devo  ;) )  So I wanted to cook something different so I went with country ribs on the pellet grill.  Since I never had tried sear and hold (or at least I think I have not) with coutry ribs I thought why not try  ;D ;D

So here they are, seared at 500+ then turned it down to smoke setting and let them ride till they hit 175 IT   Moped them with sauce and even tried Super Pig + sauce on two of them (ribs on the left side on the grate)

These were very very good and even Kimmie didn't gripe about them so win win!  ;) ;)

This cook is going into the have to do it again page!!!

They sure do look mighty good!  I don't believe I have taken your approach before.  I usually just go straight to smoke first and then bump up the temp a bit till done.

Did the sear prior to slow cooking make them tough? They look really good....

No, the outside was similar to a steak.  It had a nice little crust, not much but it was there

The inside was juicy as I had hoped.
