I have just made the switch from Gas to Charcoal. I bought a Meadow Creek offset. I have only used it a few times. I am enjoying it, but still trying to figure it out.

I think Smokeasaurus used to own one of those....He may be able to point you in the right direction with it. And - the general principles of stick burners are pretty universal. We have several other folks here that run offsets....Post any question you have about them in the forum section for offsets - and you will get some responses I am sure.

Keep at it. You got a good smoker and any offset smoker will take at least a few cooks to get dialed in.
