I like to smoke salmon filets for an hour (~180-200º) then bump the temp to 300ºF till the IT reaches 145ºF. For estimate only: Took 1½ hours.
Then I remembered a post from a few weeks ago about smoking some Johnsonville Brats. I wrote down the recipe which called for 2 hours of smoke and then bump to 300ºF until IT reached 170ºF ... what better time to try the recipe. Cut the smoke down to an hour to coincide with the salmon ... 8)

The Money $Shot$ ... > Salmon Filet, smoked Brats, Sweet Potatoes, and Corn on the Cob ... I was pleasantly surprised to see the smoke ring.

:D :D :D Got 5 squash in the fridge with a few more to harvest today! Looking for new side recipes. Going to probably use and old recipe of mine tonight using the microwave.
In a microwave safe baking dish: Mix sliced Zucchini and yellow squash, ½ a red onion, mushrooms, salt/pepper/garlic, and a can of stewed tomatoes. Cover and nuke to 10-15 minutes or until veggies are done to your satisfaction :)

Ohhhh that plate looks good. Since it is never going to be spring here, you can drop the squash on my porch anytime! If it's easier, just leave a plate like that one... ;) ;D ;D

Brats and salmon look delicious Pete! Have you thought about making zucchini bread? When I
had my garden and over planted squash my wife made some real yummy zucchini bread. It is delicious
hot with some butter. ;)

I love zucchini bread Smoke. My wife is a wonderful baker ... but now that I'm living a Paleo lifestyle (- 30 lbs to date) any and all breads and other items like cheese etc are off limits! :( :(

They are "Frogmats" ... http://frogmats.com/ (http://frogmats.com/) ... Been using them for years on all my pellet grills.
