I was planning on canning the green beans but they caught me by surprise and matured before I could buy the necessary supplies and equipment. Starting from scratch. Decided to vacuum seal and freeze the beans instead.
To blanch or not to blanch ?! Did some quick research and came to the conclusion that freezing has the same effect as blanching – it stops enzyme activity and preserves nutritional value while in the freezer. Washed, dried, trimmed and vacuum sealed the beans before freezing.
Not blanching the Beans sure made the whole process easier and more enjoyable 8)

Those look mighty tasty, we had a Japanese family that lived next door to us in high school and when we would give her fresh green beans she would put them in a tempura batter and fry them up, best green beans I've ever had.

Year round my favorite Chinese restaurant serves fried green beans and you're right Saber - they are delicious. But in the Spring they serve fried asparagus which is to die for :P :P :P
