Cut a small size rib roast, enough for the 2 of us, from a whole pork loin - rubbed with EVOO and Jan's Dry Rub. Wrapped in plastic and fridged for 5 hours. A Boneless Rib Roast is the rib portion of the loin, closest to the shoulder. A similar cut to the center pork loin but with more marbling and better flavor, some compare it to the prime rib in beef.
Roasted at 350ºF until the IT reached 150ºF. Rested under a foil tent for 10 minutes before serving with a side of Cauliflower mash and fresh steamed squash from the garden.

Man roast pork looks really good, and so do the veggies. I could tear into that whole plate with no trouble.
