A friend gave us some fresh Amber Jack the other day. So I decided to grill it three ways.
1. Redfish Magic
2. Cajun Power
3. Garlic and butter
I almost over cooked it. Really easy to do with AJ. It tends to be dry. Over all the old school butter and garlic won. With the Cajun Power in a close second. The magic would have done better with butter.
We use to have an alcohol stove on the boat that would get just hot enough to melt the butter and cook a snapper right off the hook. With lots of garlic you could cook it just done and man o man. Hard to beat that.

I've never had Amber Jack before. It all looks great, and even though I agree classic garlic & butter is hard to beat, I'd have liked to have been there to try all three. I love grilled fish.
