Pastrami anyone?

The pic below is the culmination of a 14 day adventure.  I trimmed out a 12 pound sirloin ball tip and separated it into 3 sections.  It then went in a corning brine for 10 days followed by an overnight in the frig to dry.  I then applied Uncle Louie's Pastrami Rub available at American Spice Company, wrapped and back in the frig overnight.  Next day, into the MAK burning hickory for 8 hours until the IT reached 150.  Wrapped in foil and placed on the counter to cool then opened the foil, wrapped the meat in plastic wrap, closed the foil again and into the frig for 3 days to allow the smoke to even out.  Got out the big electric slicer yesterday and sliced it all up.


Now where did I put that mustard?

Larry, I can see why you chose that cut of beef to corn. It has just the right amount of marbling and looks like it slices up perfectly.
