I am impressed!!! Cliff - the sausage looks great. But, I like your sausage hangars too - great use of commonly available stuff.

Here's a couple of shots of the sausage sliced and sandwiched (is that even a real word?)...

On a bun topped with some marinara, grilled onions & roasted red pepper

Wow is this sausage good! It has that classic Italian sausage hint of sweetness from the fennel, an ever so slight kick from the red pepper, and the smoke just sets it off. I may very well have a new favorite smoked sausage!  ;D
