yesterday i tried to sous vide something crazy . a sirloin steak that is rubbed with a mix of butter and ancho powder and on top i put 90% pure chocolate .
5 hours at 136 .next to it i made a cabbage is a tomato puree . a creamy black pepper and garlic sauce . i will do it again .

Very interesting idea.  I can see it working since that type of chocolate isn't very sweet.

Looks good ahron..tell me about the flavor..lil chocolatey or more, or more like coffee with lil taste.  Pam  .☆´¯`•.¸¸. ི♥ྀ.

I was wondering the same thing, since bitter chocolate and coffee have some similar flavor tones.

That looks most excellent! I might make a rub of ancho for floral, add a bit of chipotle powder for heat, bakers cocoa powder and then fine grind espresso to add the perfect hint of bitter.

Hi thanks for the good words . well how can i explain the flavour ? it is slightly bitter slightly spicy ,it is not sweet , you don't taste the chocolate only a hint in the back of the Palate .
the creamy sauce of B Pepper and garlic added another layer . if i will add something i will add hot pepper like cayenne pepper .
