Feb 06 2015

I went to Kah Meats this am to get some bacon; I needed some for my supper tonight. He just happened to have some jowl bacon so I got some of that too. I have two recipes in mind for it. I cut it in two to vacuum seal and freeze. I sliced off a thick slice of it for a bacon and egg sandwich for my lunch.

I had it on a bun with some stone ground mustard and topped with a fried egg. Man that was a little taste of heaven!

Thursday when my new Savannah Stoker v3 controller came it was 6 deg. that morning and a chill factor of -14 deg. and they canceled school. As much as I wanted to get it installed there was no way that day. It is supposed to be 40 deg. tomorrow so I may get it installed. I salted the ice between my back door and smoke deck so it will be clear.

I have never tried hog jowl, but after seeing this sammie I will have to look for some! Delicious looking Don!

The stuff is real good.  Like bacon but thicker and more fat taste as Kimmie says :D :D :D

YUM!!! I love jowl bacon. We get it quite often from the butcher, and I've made it a few times. It's as good as regular bacon and economical too.
