A new smoker/ cooker / grill for us

Hey Y'all, I haven't posted much of anything on this forum because I have used the CB version because I have been mainly a CB grill/infrared kinda guy.  Well, I have crossed over to the dark side for awhile...into the realm of XXXXX brand charcoal grills and smokers.

On Labor Day I went over to the new Academic Sports and Outdoors store and bought the Cajun Injector World's Greatest Chicken Cooker.  I watched the videos and thought it would be so easy to smoke with this unit.  Well, lemme tell you right now - IT IS!!!  I had some ribs that had been rubbed down with Tommy's Special Blend Pork Rub and vacuum sealed for a few days (that's a good technique to use).  I got the coals and hickory chunks smokin' and put a rack on the top shelf, over the water pan.  I cut the rack in half - one for me and one for Deb.  I found it very easy to add more charcoal and chunks as needed and VERY easy to use the dampers to keep the temp at about 250*.  I had chores to do, so I did them while comin' back to check the fire every now and then.
Overall cook time was about 4 1/2 to 5 hours.
I know I'm supposed to show pics, etc., but I am on the 'puter at work with no pics.  The half that was a little bit thinner was not foiled at all.  It turned out to be one of the best I've done...and y'all know I'm not all that good yet.  The other half was foiled foiled and later put in the fridge to hold for lunch the next day.  To warm it, I opened the foil long enuff to add a little apple juice and bbq sauce, then sealed it good and warmed in the oven for about 45 minutes on 275*.  Those ribs turned out to be the BEST we've done to date.  Texture, color, taste, etc was incredible.  And I think it is because #1.  great tasting rub; #2.  Being able to hold the temp and smoke at the same level throughout the cook.
Needless to say, I REALLY like the Cajun Injector cooker/smoker...supposed to be for chickens, but it does a great job with ribs.
I'm hoping to do two racks this Saturday...I'll TRY to get some pics then.

Y'all know I'm not a great cook - just a regular backyard jack.  But everybody wants their cook to turn out really good.  Mine don't very often...I guess that is why I am so glad that this one did.  I know ONE thing...I'll be using this C I for smokin' a lot more regular.

Good to see you here again Jack!

We have no prejudice against any brand or type of cooker here. Heck - we like Charboil - and I am willing to bet we ALL own at least one of their products ( as well as one of everybody else's :D )

Lookin' forward to some more of your posts and - some nice food! You are a good cook - heck I have seen some of your work!

Welcome Jack. My brother also owns the CI WBCC and we put it thru its paces over the Labor Day holiday. For the price it might also be the Worlds Best Smoker!!

I use a couple of Weber charcoal baskets in the bottom section and can cook all day at 230 degrees!! I just add 8-10 briquettes every hour and that is that. You are gonna have some great cooks with this cooker!! Did ya get yours for 99.00?? We got a brand new one tucked away in the back of the garage for when this one croaks but I think it is gonna last a while!!

Get us some pics unless all you like to cook is unicorn!!  ;D :D

I saw Jaxon reviewed the Cajun Injector cooker on Academy's web-site so I know he has got one!!  ::)  About time he got over here!!  ;)

Yeah...it be me...I had user name and password problems - forgot both!!!
THEN I forgot about this forum until today.

B T W, I DID pay $99 for it at Academic Sports on Labor Day.

Went by yesterday to stock up on Hickory and Pecan chunks  - also have two 20 lb bags of pellets for smoke makin' (hope they don't go bad)

Put the pellets in a 5 gallon bucket with a tight lid and they'll last forever.   That's how I store a lot of mine.  Kingsford Charcoal Kaddies work great as well.    Don't store the bags on a concrete floor, as it will wick moisture into the bags..

We haven't sold a single one of those cookers at the Academy where I work. I think it is because we don't have one put together for folks to look at. I don't work in that department anymore but I may get our assembler to put one together.

I am gonna run the cooker this weekend and will take a pic of how I set up the baskets!!

Talk to someone 2-pockets and get on on display...it is a nice cooker and I still cant get over the bang for the buck ya get with this unit!!
