Hey Y'all, I haven't posted much of anything on this forum because I have used the CB version because I have been mainly a CB grill/infrared kinda guy. Well, I have crossed over to the dark side for awhile...into the realm of XXXXX brand charcoal grills and smokers.
On Labor Day I went over to the new Academic Sports and Outdoors store and bought the Cajun Injector World's Greatest Chicken Cooker. I watched the videos and thought it would be so easy to smoke with this unit. Well, lemme tell you right now - IT IS!!! I had some ribs that had been rubbed down with Tommy's Special Blend Pork Rub and vacuum sealed for a few days (that's a good technique to use). I got the coals and hickory chunks smokin' and put a rack on the top shelf, over the water pan. I cut the rack in half - one for me and one for Deb. I found it very easy to add more charcoal and chunks as needed and VERY easy to use the dampers to keep the temp at about 250*. I had chores to do, so I did them while comin' back to check the fire every now and then.
Overall cook time was about 4 1/2 to 5 hours.
I know I'm supposed to show pics, etc., but I am on the 'puter at work with no pics. The half that was a little bit thinner was not foiled at all. It turned out to be one of the best I've done...and y'all know I'm not all that good yet. The other half was foiled foiled and later put in the fridge to hold for lunch the next day. To warm it, I opened the foil long enuff to add a little apple juice and bbq sauce, then sealed it good and warmed in the oven for about 45 minutes on 275*. Those ribs turned out to be the BEST we've done to date. Texture, color, taste, etc was incredible. And I think it is because #1. great tasting rub; #2. Being able to hold the temp and smoke at the same level throughout the cook.
Needless to say, I REALLY like the Cajun Injector cooker/smoker...supposed to be for chickens, but it does a great job with ribs.
I'm hoping to do two racks this Saturday...I'll TRY to get some pics then.
Y'all know I'm not a great cook - just a regular backyard jack. But everybody wants their cook to turn out really good. Mine don't very often...I guess that is why I am so glad that this one did. I know ONE thing...I'll be using this C I for smokin' a lot more regular.
