Injection ?

I plan on doing a pork tenderloin this weekend does anybody have a favorite injection recipe......something on the spicy side?

If you want spicy I would go with a Jerk Seasoning injection. Really great as a rub. Especially on chicken.

Grind the ingredients down into a fine powder using a mortar & pestle then mix with water. Just enough to make it injectable. The salt in the rub will turn the mix into a sort of spicy brine.

1 tablespoon garlic powder
2 to 3 teaspoons cayenne pepper
2 teaspoons onion powder
2 teaspoons dried thyme
2 teaspoons dried parsley
2 teaspoons sugar
2 teaspoons salt
1 teaspoon paprika
1 teaspoon ground allspice
1/2 teaspoon black pepper
1/2 teaspoon dried crushed red pepper
1/2 teaspoon ground nutmeg
1/4 teaspoon ground cinnamon

Great idea, I use jerk rubs/paste/etc... all the time, love it. Try replacing the cayenne with Scotch Bonnet powder sometime: https://www.jcskitchen.com/p-10614-JCS-Scotch-Bonnet-Pepper-Powder

Walkers Wood or Spur Tree are the best, most authentic pastes you can buy.

muebe - that looks like a really good recipe. Could you leave a copy of it int he recipes section so that we can all find it when looking for a nice Jerk recipe?

And - boyer-

Just thinking about your injection question: if you combine all of those ingredients in muebe 's recipe - with coca cola - or apple juice - and warm them to a low simmer for say - 30 minutes, then turn off the heat, and allow to cool ( actually CHILL them to 40F - or lower for food safety!) then strain the liquid thru a fine wire strainer or cheese cloth - or whatever you have to remove the solids - then you can inject this. And - save the remaining "juice". Put it in a spray bottle, and spritz the meat a few times during the cook.

I had an injection in mind...but I would go with Muebe's....that one sounds real good  :P

It would take a number of days to get a brine to adsorb into eh meat in the same way an injection can carry it in a few minutes. You deposit the flavors in different areas - and the cooking "spreads it" around via the steaming of the meat as it gets hot.
