Getting ready for Paducah this weekend

Started the weekend making a batch of Pineapple Petals for Jan and some of the other wives who seemed to enjoy them the past couple of years.


Loosely vac sealed so the sugar doesn't cause them to clump together as bad as last years did.


I didn't have time to grind my own chuck for beef jerky rounds so I ended up with some 90/10 ground chuck from Sam's, it has more fat than I wanted but it should turn out good. Here's two 5 pound batches stuffed in 2 1/2" casings getting ready to go in the freezer to be sliced before they take a ride in the dehydrator. One batch is Smoking Gun Marinade and Chipotle Mustard Fusion sauce from Rodak's, the other is a Soy/Worcestershire based recipe.


I'm trying an experiment with my dehydrator to speed things up some and so far it seems to be working very well. I moved the dehydrator to our small laundry room, turned on the exhaust fan as usual, but this time I put a dehumidifier in the room and closed the door. Figured if it can suck enough water out of the air it should speed up the drying in the dehydrator and so far it look like it's working well, it cut the pineapple drying time in half and the jerky is on track for a similar cut in time.

Hopefully I can get the double stuff smoked chex mix done tomorrow. :)

Looking good.  I am working on some new mini-cheesecake recipes, plus a few other things that will make their appearance in Paducah.  Think "sweets".

I was just thinking the other day I need to plan a trip to McKinney for some BBQ, I'll text you if I can get something planned up that way.

Sure thing, they are very simple to make in the dehydrator. I have done them with a fresh whole pineapple, although this time I bought a tub of peeled pineapple wedges from Sam's. Their advantage was that they had already leached out half of their juices in the container and I got the usable pineapple from 2 pineapples for a little more than the cost of one whole pineapple and a cup of pineapple juice to drink.

For a whole pineapple cut the top and bottom off, peel it clean
Cut it from the top down in 4 quarters
Then slice the core off of each quarter and freeze the quarters
After they are partially frozen I use my hand mandolin set on 2.0 or about 1/16"
Lay them out on dehydrator sheets and dry them out flipping once to make sure they dry good on both sides.

Next time I may get whole pineapples and put the cut pieces in the fridge for a couple of days to get the leached out pineapple juice and speed up freezing time.

And bagged up for the trip north.


And last but not least I managed to get two batches of pecan smoked double stuff Chex mix done. I also have a bag of un-smoked mystery Chex Mix to get taste tested in Paducah.

They are really good, they turn out paper thin like a flower petal but they melt into a sweet pineapple bite in your mouth.
