Got a new toy.. Let's make some comfort food!

So I splurged on a kitchenaid pasta attachment

But let's start the ragu sauce first
Here are the players

Finely chopped 3 cloves of garlic, minced up half an onion, some celery and some baby carrots

Some evoo and garlic with some fresh rosemary first

Add the mirepoix to sweat down

Add equal parts ground beef,pork and veal

Brown up

Add some tomato paste and a big gulg of red wine

Next add in 2 cans of peeled tomatoes

Bring to a high heat and reduce to a simmer
Then I added some bay leaves and chopped fresh basil

Let this simmer for at least a couple hours.
Next I started the pasta. 300 grams of ap flour and 100 grams of durum semolina and 4 eggs.

30 seconds with the mixer attachment and 2 minutes with the dough hook. Finished with 3 minutes of manual kneading.

Wrapped an into the fridge for 30 minutes. Then divided into 4 sections

No pics of the rolling and cutting with the attachments... Sorry it requires 2 hands.
Here are the finished linguine noodles

Boiled in salted water for 3 mins and plated with the ragu sauce and some garlic bread

All I can say is there will be no more dry store bought pasta in this house!
This was one of the best meals I have had in ages!!!

Perfect..I have that pasta attachments too..makes the best noodle and spaghetti or lasagna..worth what I paid for them about 14 years ago. I have the new one that you don't use the rollers..just throw chunks of dough in and it come out with whatever die that you use..really slick. can't beat fresh pasta..gonna have to unload my Ron Popiel pasta maker from years ago. And it cooks so fast.  Nobody doesn't like pasta.  Great cook.  .☆´¯`•.¸¸. ི♥ྀ.

my wife has a pasta maker for the Kitchen Air on her wish list.  I don't think I will show her this pictures or one will be on order.  The pasta really looks great.
