BTW one thing I learned while doing two 16 hour cooks in the Blaz'n Grill Works Grid Iron is I need to empty the burnpot at about 12 hours using BBQ'r Delight or fire could and did start burning up the auger tube.  Not a problem as long as do not forget.

Art, you mentioned that cap up had more moisture, do you attribute that to the fat "self-basting" the butt, which was one of that reasons that many of cook fat up, of course.  I ask because I've begun hearing many, many BBQers saying that fat really doesn't penetrate the meat at all.

BD as far as self-basting or not I am not going to enter into that briar patch.  Done that and have the T-shirt. ;D
As I said the two butts were so close in taste, smoke and moisture profile I mixed them together.
These were take out's for the children and grand children and so far all but one gave high reviews.

Try Lumberjack pellets Art. I had the same problem with BBQ'r Delight with my Grid Iron. Now I didn't have that problem with them in the Traeger Junior. Go figure.

Art - It all looks great!

For me, pork butts cooked in different pellet grills...I have not detected any appreciable difference as to fat cap up or down. What little differences I thought may have occurred - may have well been differences in the individual hogs.... ;) ;D

I am occasionally surprised in 2 butts - cryo-vacced together - prepared exactly alike, and cooked side by side. One will pull at 192F - and the other wants to be cooked to 205F....We just can't know exactly the amount and distribution of the intramuscular fat, and what stress the animal may have been under when...he became "pork butt".... :D

Thanks Mike I will order a bag and check it out.
As of right now I have an assortment about 300 pounds of BBQ'r Delight and Cookin Pellets.I
PS. I did notice less ash in the fire pot with Cookin Pellet than BBQ'r Delight.
