Looks pretty cool but it is somehow satisfying to hone my 60 year old TruEdge Ontario Knife Co knife and trim them.  Trimming meat is a pleasure for me, maybe because my Grandfather owned an old time butcher shop.

I find it rare that I even want to "trim" the fat-cap on a brisket. Not sure that fad is driven by the low-fat dietary desire....or where it comes from?

Having a juicy and tender brisket is never a problem. One that is too dry is. Yep - will leave my fat cap!
BBQ is neither verb or noun. It is an experience.

He showed me his legs at the Ohio Gathering and he is nicely spray tanned, a natural color insted of Coppertone.  just sayin  .☆´¯`•.¸¸. ི♥ྀ.

I ordered the Qwick Trim this morning.  Is going to work great to trim the fat cap from pork butts.  Here's the kicker.  Less than 30 minutes after ordering it, the owner of the company, Rob Wheeler, called me to thank me for my order and gave me several tips on how to properly use it and extend the life of the blade.  Mom and Pop company in Maui Hawaii.  They own a small BBQ place there.  He is the sole cooker and got tired of using a conventional knife for trimming so he developed the Qwick Trim. He also told me he calls every customer personally.

How's that for customer service?

Sort of a vegetable peeler on steroids. Don't know that I'd buy one unless I was trimming a lot of briskets on a regular basis (and using the trim for ground beef or something - seems to take a lot of meat with the fat).

We were on Maui a couple months ago and drove by his restaurant (Iron Imu in Napili) about lunchtime. Looked interesting so we stopped in but unfortunately they're only open for dinner. Maybe next time.
