I have been wanting to start making sausage for ages! Today was my first attempt. And I chickened out on the stuffing and made it into 1/4lb patties. The sausage recipe I used came from Rytek Kutas' fine book, Great Sausage Recipes and Meat Curing. Rytek said in the book that his favorite Italian sausage is Sicilian-Italian Sausage with Wine and Cheese. I figured if it was good enough for him, well it should be quite good enough for me!
Recipe was given in 25lb and 10lb amounts, I did a 5 lb batch.
Next time stuffing.....
