Ya gotta love the Instant Pot or any pressure cooker for the simplicity and quickness of making things like soups and everything else. Although I only pressure cooked the soup for 7 minutes it did take about 20 minutes to come to pressure. I'm still learning how to use the Instant Pot but since I like my veggies on the al dente side I think next time I'll reduce the pressure time to 6 or even 5 minutes. None the less, this hearty stew type soup was simply scrumptious and very satisfying.
One of the ingredients that gives a soup and other recipes a heartier flavor is tomato paste. You'll be pleasantly surprised. As you can see below, you can throw just about any vegetable into the soup. Browned the pork sausage and drained the grease. I also added 4 cups of water to the diced veggies. When it comes to spices, I never really measure anything but just add a dash here, a pinch there, and violĂ ... enjoy!!
