Jalapeno/Cheese Summer Sausage

Made these up for some of the park guys but going to take up to PA.

PH this morning was 4.8, close enough to stuff.







Done and ready to head north.

Is that the regular cheddar (not the high-temp)?  It looks like it worked just fine.


You know, it only adds another 5 1/2 to 6 hours for you to swing through Ohio and drop some of that off!

It's not all that difficult. You should give it a try. I will warn you though, it opens up a whole new world of smoking possibilities and easy to get hooked!
