Gonna have a houseful today. Build your own tri-tip sandwich bar. Just seasoned and back in the fridge for an hour before they hit the smoke :)

Well, plan "A" was one of the daughters was coming down and we were going to grill out.  She's apparently got a case of the "sick" yesterday so that's a no go now. The other daughter moved out of state in March when her husband took a better job offer, so now it's just us empty nester's.    Time to dig out one of the 2 packs of steaks and crank up the sous vide.  Think I'll do Filet Mignon instead of ribeye today.

Now that "real" fireworks are legal in GA, the neighbors usually buy a bunch of the nice mortar shots.  We will probably drag out the lawn chairs and watch the fun (our cul-de-sac seems to end up attracting a lot of lawn chair watchers when they do that).  He had one go off in the cardboard tube last year (did not go up, just BANG). That was interesting.

It always made me chuckle that Georgia didn't allow fireworks but yet every 4th, everybody had already went to South Carolina, Alabama, Florida or Tennessee to get them. I used to have a Cop for a neighbor that would put on quite a show, lol.

As for the food, Filet sounds good to me! It sure as hell beats the burgers and dogs I have planned.

Why yes Judge, we did destroy all those fireworks and the beer from the old cases in the evidence room  (one at a time.....)

Hey!!!!  I saw those photos of the burgers and dogs, that was some good looking stuff!   In the end we went with 2 ribeyes.  A couple of hours in the sous vide and then I charred the outside on the grill grates on the big Weber S-670 gasser.  Perfect medium!!!!  (sorry no photos).   I paired mine with a Caesar salad and stayed low carb (which is another reason those dogs and burgers look super tempting to me).
