Garden Fresh Marinara with Bella's Help
« Reply #-1 on: September 16, 2018, 07:43:17 PM »
We're heading down to Sunny
Florida tomorrow for a family visit, so had to harvest some produce from the back yard and make a big batch of marinara for the freezer. This will taste great when the cold Illinois winds blow this Winter. Bella is supposed to be helping but she's lolling in her pool. When she's gets pruney she will be guarding the eggplants! Let's see, we have 12 lbs of tomatoes, a little celery, carrots, onions, garlic, hot peps, basil, and red red wine. So much that has to be two batches. About half of everything into the pressure cooker for 5 minutes, then simmer for a couple hours. I'll post a finished product later. Gotta pack a suitcase.

Okay, my bags are packed and the marinara is finished. Mrs H did her thing with the immersion blender, and we ended up with approx. 2 gal. of marinara. Good eats down the road. We will transfer it to quart-sized freezer containers tomorrow.

You're right Bill! But as long as there's LOTS and LOTS of Sunday GRAVY on the pasta, Hub should be OK with that! I hope!   :D

Looks excellent but the vital question is how well it compares to the "gold standard" (Tommy's Great Grandmother's red sauce recipe).

Jus' sayin'...
