My first attempt at fresh pasta!

I am continuing to broaden my horizons in the culinary world. As I did last week, I again made some ice cream this morning but that'll be another post later. This post is about my foray into the world of home made pasta. I can't lie and say I wasn't a little bit intimidated by this!

My Wife found a recipe online for stuffed ravioli with a parmesan cream sauce so after the 2 batches of ice cream were made, I made up a batch of pasta dough and hoped for the best, lol. The dough I made was primarily for ravioli but since I had extra, I cut it into Tagliatelle. I have to say, it turned out GREAT! I am so impressed with the taste of fresh pasta! I really do like egg dough over semolina dough but I will make some extruded style noodles in the future, to test out the Kitchenaid attachment. For now, let me show you our noodle experiment lunch :)

I took the Tagliatelle and put it in the pan after the rav was gone, to soak up that sauce. Topped it with some of the mushroom filling and some parsley and WOW was it good!



I owe this all to y'all talking about pasta last week, thanks for planting that seed, lol!

Looks good.  Its a lot of work, I usually end up trying to make a couple months worth and freezing it.  Comes out the same as made same day.

Looks delicious!!

I bought the Kitchen Aide pasta attachment  a while back, we started a kitchen remodel which is still going on.   

Cant wait for the new kitchen and to try it out myself!

Thanks Don, I thought it was a successful first outing! I'll be using the Kitchen aid one soon, to make some extruded pasta, Semolina noodles. I am looking forward to it!

I have the rollers,  one  makes sheets  one  makes spaghetti  i think  and the other  fettuccine (I think)

Yeah  pretty sure it will be fun,  and do love   pasta from scratch!!

It looks like you pretty much nailed fresh pasta on your first try!


I gave up making fresh pasta when I went low carb, but now that I have some carbalose flour (low-carb wheat flour) I've been thinking about trying to make some low-carb pasta.  This post may have just pushed me over the edge!



P.S. That ravioli press works great for homemade Pierogis too.
