Evening y'all! I smoked up a brisket and pork butt today. I gotta tell ya....I'm kinda hooked on prime brisket now. They are excellent! We've been finding them at Costco fairly cheap. I hope everyone had a nice weekend.

What kind of prices are you getting prime for at Costco?  They have doubled the price recently where I live, and the last one that I bought was over 40% fat.

At the Costco in Montgomery Al the price was back down to $3.99/lb last week after being up to almost $6 a couple of months ago.

Well, the one we just smoked was I think around $3.50/lb but was bought back in February. I haven't bought one since then but I think they were up near $6.00/lb a month ago when we went.

You already know the answer to that, lol! Indeed they were my friend. The KBQ is king at this house. Although, we do ribs on the pellet pooper. We save the laborious smoking for the big cuts only. It's WELL worth the effort. Nothing compares to the food it delivers. Always turns out a great product.

We also rarely smoke just one thing on the KBQ. My thought is that I've already cut the wood, the smoke is rolling, why not cook something else in there? Butts and Briskets travel in pairs, lol

It's a bit of a pain to have to add wood every 30 minutes but the flavor of the meat is unmatched. Nothing we have smoked on has come close to that flavor.
