No, not andouille. It was a really good locally made smoked sausage though. In fact I may go in the next day or two to get more sausage(about 40 miles from me and yes, it's worth the trip.)for the next batch of red beans I'll be cooking.
I do sometimes use andouille and sometimes not. I'll see when I get there. Sometimes I add tasso too.
