Making some small sizs LJ.




Mix



Sheep casings soaked for 3 hours with frequent cold water changes.



Stuffed and poked.



Weigh each set of links (green weight) Tag and number each set dont forget the date and weight on the tags.



Keep notes.



Hanging to dry up some.



After a few hours of dry time its now smoke time, 4 hours then re hang. You will loose some weight on these. Will re weigh in 3 days.

No heat from the smoker, Cold smoke.

Drove close to your place this morning.  No time to stop, however.  If I had known your were working on landjaeger, I might have been forced to stop.  I am still waiting to try this.

I found that the plastic trays you use at like Golden Corral work better, this way you can use any sz casing to press with, need 4 trays.



Weigh day 3.

Ready to weigh again, Tags removed before weight.



You can see the weight id going down, which is good. Cant find my ph strips so i just winging it here.


My dry fridge space (for now) The blue cube below the LJ is a fridge fan.

This is the 3rd weighing of the LJ. Sorry for such dark pics.




Smell is really good, texture is getting firm. No mold of any kind. Temp in the RV is ranging from 67-72. R/H is steady at 66%



They are loosing lots of weight. Going to Florida for couple days and these should be ready when i get back.

This is the final weighing. If i let them go to long they will be like eating slices of rocks.

Tags removed before weight.


Really dried nice and close.


I did wipe the LJ with vinegar just in case.


Here are some cut shots.





Shelf stable but probably wont last the week  ;D
