I've done them both ways and it is easy to peel off after cooking. But I like ribs that are rubbed on both sides and rubbing the backside then peeling off all that goodness afterwards defeats the point for me. I always remove the membrane on mine now.

I always pull them off. I ate at a BBQ joint which served their ribs with them on and they were terrible and I said I'd never make any with them on.  Dee
