LEM jerky

Outa jerky again so mixed up a 4 pound batch of 93/7 GB I got from Wally World.  Used Backwoods LEM HOT blend.  Used less water than they call for and mixed the cure 1 in the water.  After the cure was disolved I added the mix and hand mixed.  This was mixed up Friday evening and put in the fridge until Saturday morning.  Shot the jerky Saturday morning and into the Bradley it went at 150 degrees with 3 hours of Hickory using the rectangle AMPS.  At 8 hours I pulled it and let it cool on the counter and then into a paper bag and back into the fridge.

Did you see the GB jerky mold at the sausage maker?
Did not see the GB jerky mold.  Will have to pop over there and take a look at it.

It makes a good Bartering currency too. Since my back surgery I don't go Razor clam digging anymore so I trade it for razor clams with a guy at work :)
