Beef Summer Sausage.

Going with 5lbs 80/20 GB here and taking notes.
Looking for a new Venison Summer Sausage recipe, once I start filling up the freezer again.
This is Cliff's recipe.

Spices, NFDM & Cure 1 in some water.


Did my usual run in the Bradley with the PID using Hickory pellets.
Smells good.


Sliced one the next day.


Closer look.


Pretty darn good.

Lookin' good, Sam.  I love SS.

You would have gone out of your mind at the KOA get together this past weekend.  There was some damn fine sausages and meats made by a bunch of the guys.  I brought a small cooler home.  My refrigerator is packed, again.  I thought I might have to make some more elk SS, but I think I will wait a while.

I've got 12lbs of Elk left myself Art (it was given to me). Experimenting on the 80/20 GB first.  ;D
Would love to make a gathering at some point.

Sam you done good!  Nothing like good homemade SS.  The crap in the store don't even come close to what we can make ourselves.

For the guys at the KOA Gathering it is the stuff I left in the fridge to become the semi dry cured experiment.

And -  I have to tell Sam - it is the best kosher salami I ever ate!

 (But...I am always available tot receive and review samples! :D )
