More Pepperoni

Still working on that Pepperoni recipe.  Made a 5 pound batch and did some snack stick and some pepperoni chubs.  Used a beef with a 80/20 blend.  Changed up a few things from my 1st go round.  Going to put about 3 hrs of Hickory on them.  Fried up what was left in the stuffer and wife gave me the thumbs up so that is a good sign.  Will give her a blind taste test of the 1st go round and this batch and see what she likes better.

Money shots to follow.

love the color of those.  I know you use hickory.  will they be the same color if you used apple or cherry pucks?

The type of wood will not affect the color.  The sticks are darker right now because I am using mahogany colored casings.  The chubs are clear fibrous casings.  As the cure starts to work and the smoke starts to penetrate they will deepen in color.  The color that you see in the chubs is the paprika and it is going to get a deep red pepperoni color hopefully when they is done.  Will post a photo after the smoke is over and another shot when they get to 152 IT.

I was pretty happy with the way the sticks and chubs turned out. Happy with the color of the finished product.  I fried up a few of the slices of the chub and tasted like pepperoni to me.  Just missing the pizza crust, sauce and cheese.  Some of the sticks and chubs are heading to California to a top secret testing lab for evaluation and taste testing.
