Mac Chuck-Wagon Casserole

Here is the Mac Chuck-Wagon Casserole that I made ;D

The ingredients...



First boil the pasta until al dente...



And drain...



Now add some chopped onion and butter to a pan and melt...



Add 1/4 teaspoon ground mustard and add some flour until thickened into a roux...




Then add the four cups of milk and cheese to the roux and continue to simmer...



After cheese is melted and sauce is thickened then add the pasta...



Set the mac to the side. Chop up the onion and bell pepper...



Now cook the two lbs of ground chuck, onion, and bell pepper in a skillet and then drain the fat...



Then add the can of chili beans, a cup of BBQ sauce and a half a jar green olives then simmer until mixed well...



I used some stoneware to bake it...



Now start with a bottom layer of meat mix...



Then a top layer of Mac N Cheese and a liberal sprinkle of parmesan...



Into the Traeger at 400F for 40 minutes...



And all finished...

Oh man, that last money shot was over the top - what a great recipe!

I've never thought to add mustard to roux - sounds like a perfect addition to savory thickeners
