I'm up.  I am making Sparky Dean sausages today.  Going to clean up my work bench in the garage this morning and and use that for my sausage making area.  Sailor I got those extra knifes and course grinding plate you told me to get.

Sparky, you got to live dangerously!  Make your sausage in your wife's kitchen and clean up your mess and demand a man metal for doing a great cleaning job.  When she comes in to inspect and finds little flicks of meat stuck under the cabinets, on the back splash and perhaps stuck to the ceiling you can blame it on the kids.   ;D  My wife has been searching for a new house that has an outside kitchen.  I have no idea why she would want to cook outside when the inside kitchen has AC.  I guess she is wanting fresh air when she cooks ;D

To get longer life from your plates and knifes, it is recommended that you have one knife for each plate and use the same side of the plate where the knife meets the plate each time you grind.  The knife will ware with the plate.  Anyway that is what I read somewhere and it makes sense.  I only have one knife that came with my cheap grinder and when I ever get a bigger badder grinder I plan to get a knife for each plate.
