Romanian Mititei Sausages

Left the Sausage Vault open too long putting in new secret receipts and this one fell out!

2 pounds ground chuck
2 tablespoons olive oil
2 tablespoons water
3 finely chopped garlic cloves
1/2 teaspoon thyme
1/2 teaspoon hot red pepper
1/2 teaspoon hot Hungarian paprika
2 teaspoons caraway seeds
2 teaspoons salt
1 teaspoon freshly ground black pepper

Place all ingredients in a large bowl and mix thoroughly.  Wetting hands often to keep meat moist. Cover and place in fridge for 6 hours or overnight.

Using slightly dampened hands form into 18 equal portions. Then form into oval sausages 3 inches long x 1 1/2 inches thick. Grill, broil, pan fry 7 minutes per side or bake @ 350 for 15 minutes.

Serve with tomato and green onion salad, sour cream sprinkled with paprika,  baked potato or french fries, or rice

Mititei make great appetizers and are wonderful cold the next day in a sandwich

That does look like a winner recipe, and good for those like me with no sausage-making skills

PS: the yellow sauce sounds delicious - I love mustard and vinegar-based sauces

I'm Rumanian and I need to do this to see if it's familiar. Gma and gpa raised all their own food and slaughtered their own animals, every once in a while I find something that gma made and it's great. Last thing I found was Smokin Don's sauerkraut. No need to tell him he was standing there holding his sausage with both hands last. With the temps we are having! Was a balmy -18  with windchills of -45 at 7:30am. Perfect time to slip past the Sausage Gnome!

It looks real good .
i  was  born in Romanian and i do my mititei from my family recipe .
my grandpa was well known in our village for his Mititei .
we use more garlic .  no olive oil  .
but i will try your recipe. must be great.
