Bone in chicken breast in TBE

Cooked some bone-in chicken breasts in TBE today for the first time.  Patted them dry, sprayed with Pam, and seasoned liberally with Cajun Seasoning from Louisiana Fish Fry Products.  They were some BIG breasts...3 of them weighed 4 1/2 lbs. Cooked for 65 minutes with lid on for about half the time.  They were really good and juicy.  My wife asked how I got the skin so crispy and actually chewed on the bones which is very unusual.  She said they were very good.  This will definitely be on the menu again.  Love my big easy.

Have looked and looked for decent bone-in chicken breasts.   Must be our area.   Can find them in 10# pkgs, but they are the skinniest, scrawniest, saddest looking things ever.   Cheap meat, yes, but probably best to be cooked up for chicken stock, the meat pulled for salads, enchiladas, etc  (a beef guy for enchiladas--if any--real preference is LOTS of longhorn cheese, freshly grated).   Dietary restrictions prohibit skin of any sort, and I try to stick to that, but skin needs to be there to keep moist while cooking, IMHO.    Will keep looking for good looking bone in ones--someday I'll find them.

Is there a Food Lion in your area. That's where I got mine.
