beef round tip roast. Help Needed
« Reply #-1 on: April 03, 2014, 06:45:41 AM »
I need some help here. I picked-up a beef round tip roast w/cap off and not really sure what to do with it. I know that it needs some low and slow but what do you guys usually do? Do you have a killer recipe? I have a crock pot and presser cooker and would be willing to go that way. Any input? Thanks

Season the thing with salt and pepper. Pre heat your oven to 500F. Place in a roasting pan uncovered. Drop oven temp to 475F. Roast for 7 minutes per pound. Then kill the oven and let it sit in there for 2 1/2 hours. Should finish with an IT of around 145F

Meube gives good advice.  I'll add slice across the grain, thinly.  This is a flavor cut, not a tender cut.  By cutting thin slices across the grain you'll get nice mouth feel/tenderness.

Never cooked one like that, but going to the store and get one to try.    Well Kimmie's cut would go into a frying pan to finish.  Eventhough she does not like burnt food  much anymore she still has this thing about pink in the middle

Never done one like Mike suggests, but I have done them like chuck... low and slow braised until fork tender.

Wendy did a pot roast last week and she did the same cut of meat in a crock pot. Darn thing shredded like it was in my smoker for 20 hours.

I gotta find out at what setting she used and for how long........

I do the same as Spuds! I also cut real thin as Hub suggests. To me much more than 140 and the
meat is too tough to chew.  I do the same with a tri tip roast.

I can handle down to 127f internal,I like rare meats, and do both thicker and thin slices, both excellent.Agreed can be tough. But 137 is about as rare as Mrs can take.

Just can't handle "roast" beef in the crockpot!   Guess I'm too durn old!  Either the old fashioned way in a cast iron pot in the oven, OR long, low and slow on the grill.   Latter is preferred way, just can't be beat, IMHO.
