Season the thing with salt and pepper. Pre heat your oven to 500F. Place in a roasting pan uncovered. Roast for 7 minutes per pound. Then kill the oven and let it sit in there for 2 1/2 hours. Should finish with an IT of around 145F

I set smoker to 225F,cook to internal temp about 137F,get pink roast.Apple or cherry smoke.
