Yesterday morning I broke out the JD's Greek Sauce that I got from GusRobin. I had some chicken legs that I was going to try the sauce out on. I put them in the vacuum marinator and then they spent the day in the fridge. That evening I loaded them on the leg racks for the TBE and dropped them in cold. I fired up the smoke daddy loaded with cherry chips and gave them a 30 minute cold smoke treatment in the TBE chamber before turning the TBE burner on. After 30 minutes I topped off the smoke daddy with more cherry chips and fired up the TBE. The legs were done about an hour later. They turned out real nice and had a great smokey flavor. That sauce is excellent! I was not sure if that sauce would burn in the TBE due to it's sugar content is high but the sauce worked well in the TBE. They got a real nice color and did not burn
