I was undecided on what to cook for my first cook on the SRG. I thought burgers and dogs. This
morning I trimmed a rack of spares and after coating them with Horseradish mustard I seasoned
them with Fine Swine and Bovine. I was going to do them on the Weber since my SRG was not
supposed to be delivered until tomorrow. So I said what the heck, just do the ribs. I cut the rack
in half and also cut the brisket bone in half to make them fit nicely in the SRG. I used the rib hooks
that came with my SRG.
I used the Tommy ring and put apple pellets half way around the side where the controller is. I also
filled the chip holder with apple pellets. After 15 minutes the smoke was pouring out.
I put the ribs on and turned the gas down to low.
I checked them at the 45 minute mark and they were at the color I was looking for and started to
pull away from the bone. I wrapped them in foil with a little bit of apple juice. I then put the smaller
pieces in hanging basket in the lower position. The larger ones went into the top basket.
Put back in the SRG. I will check them in about a half an hour for doneness.
I pulled them from the foil after 45 minutes. They were definitely done! I glazed them with Jack Daniels
Honey Smokehouse.
10 minutes later I called them done. I am going to wrap in foil and put in the microwave until my wife
gets home from the gym. What I find hard to believe that from the time I fired up the SRG and until
I pulled the ribs off just now it was just slightly less than 2 hours! Normally this is a 5 to 6 hour cook
on one of my other smokers or grills.
Put some red spuds on the SRG.

I haven’t cooked on gas in 15 years, not since I found I liked to cook on charcoal or use pellets. I am
telling you these were some of the better ribs I have done which I could never do on my old gasser.
Very delicious, moist and tender. They did have a slight smoke flavor and I believe the next time I do
ribs on the SRG I will cold smoke them for about an hour and then use a stronger pellet such as pecan
or hickory. Did I tell you I can’t believe they were done in less than 2 hours!
