OK,its about time to make whole beef and beef and pork dogs,will be lowfat.

So what size casings,and what type would you get?

Natural Sheep casings work well. I am partial to the 25-28mm Collagen casings. I make Big Boy Hot Dogs!

The professionals use cellulose casings to make commercial hot dogs. Here is a link ot one of those producers. Pay special attention to the spices that go into the dogs and the smoke bath and cooking system. You can get the emulsified texture by grinding through a fine grinder plate twice and then using one of my mixers to finish the emulsification. Watch this video and you will get a kick out how they are made.

I prefer the natural sheep casings because they give you that 'snap' that you can only get from a natural casing. They're a bit more work than the collagen casings, but I think they're worth it.
