Sausage and Cheese

We're going to a nephew's wedding next month so I want to bring some cheese and sausage. I need to smoke the cheese now so that it has some time to mellow.
Here is the cheese ready to be vac sealed. Sorry I didn't take more pics.


I was going to make some pepper sticks and some kielbasa chubs. I was going to make them this week but at the last minute I noticed I ran out of pepper stick mix. So I went on line and ordered some more and will have to put the sticks off until next week. Meanwhile I went ahead with the kielbasa.
It is a type called Kiełbasa Krakowska Wędzona.

Here they are stuffed and ready to go into the Bradley.

I'll freeze them tomorrow. Next week I'll make the pepper sticks.
Why couldn't Noah have swatted the 2 mosquitoes?.

Nice work but I agree. Where is the money shot. I thought you might be interested in this book as it has the recipes and the how to for all the original Polish sausage recipes, including the one you just made. I am helping a young friend get his foot control hooked up and his family is very Polish. If I talk to anyone else  in his family on the phone, I can hardly understand them. This a very nice young man an he will be joining us at some point. Here is the book.

I made these for various family parties during the weekend of the upcoming wedding. So other than frying up the remnants left in the stuffer tube, I didn't get to taste these yet.
