This here is my next project. I have been wanting to try this for a very long time. Hopefully Monday I will be in town and see how much a green ham will cost me.

Ham is done!

Very special tip of the cap to Tenthunter for his various consults. In case you didn't know, he is a really smart guy and a nice too!

My wife was afraid to eat it, since I am dabbling in the dark side for the first time. :). But she relented, and said is was great.

Results were quite good. The skin was a bit too smokey for me and the wife, but the rest was excellent.

Used a maple brine, but didn't sense much maple flavor.

Time to try bacon next.

Ham and cheesy scalloped potatoes,  one of my favorite combos.  YUM!!!

The ham looks great Pappy. Nice job.
