National championship summer sausage

Need some snacks for the big game. Got these cold smoking as I type. I will put them in a warming cabinet overnight and check temp in morning to see how close they are.

Well the sausage came out kind of bland. Not bad, just bland. So I saw this post a while back that Sailor1 posted about pickling the sausage. I think this is a great candidate for this. So onward we go! http://www.letstalkbbq.com/index.php?topic=11605.msg158460#msg158460
