Do you pull the membrane off ribs?
« Reply #-1 on: July 15, 2012, 11:57:41 AM »
Forever I would pull the membrane off ribs , but a while back on a show saw famous Dave & he just scored the membrane & charred/ seared the ribs at end of cook.said the membrane became crispy bits of goodness!

Well I tried  first with BB ribs & worked GREAT!
own spares was good, but with the thicker membrane may not be for everyone.
What you'll do?

That is how I do them now LA. He also recommends marinating the ribs in brown sugar and onion overnight. Just wipe the sludge off in the morn and season as usual.
After they are on the grill ya don't even know the membrane is/was there!! The only draw-back is you might have to use a separate grill if you are using a traditional smoker but the results are worth it!!

I always pull the membrane. I don't grill my ribs so the membrane is not appetizing. Plus removing the membrane allows for better rub penetration.

Ditto. I shove the back of a spoon under the membrane at one of the ribs sliding it between a rib bone and the actual membrane to get it started and pulled up the rest.

I use a food grade pliers to pull it off. That overnight brown sugar and onion sounds interesting. No salt to pull moisture out. Have to remember that.

If you're going to grill the ribs (pork) you can get by without stripping the membrane.  However, if you're going to spend any significant time "low and slow" where you want to infuse flavor (smoke, rub, sauce) the membrane will get in the way.  It isn't that hard to remove it, anyway  :)

I low and slow on the smoker so I always pull the membrane.
Easy to do with spoon or butter knife.

Put me in the removal group.  I much prefer not having the membrane.
