Nothing great here but will share since it gives me something to do. You might have to put up with some non-exciting cooks until I get back to normal! The potato soup did turn out pretty good for just throwing it together.
I made up the soup early then just re-heated for supper. It was just enough for the wife and I. I peeled and diced 4 medium russet potatoes and added half water and half chicken broth to just cover well. I brought it to a boil and then added about a third cup of broken up spaetzel noodles. My Mom used to add little drop noodles she called rivels and I always like them. While that boiled for 20 minutes I sautéed a couple slices of onion diced small, four green onions sliced, and a stick of celery sliced thin in some butter.
When the potatoes had boiled 20 minutes I added the sautéed veggies and let simmer another 10 minutes and added a half cup of half and half cream, a tablespoon of chopped parsley, salt and pepper.
I let that heat up then removed from the heat and when cooled some it went in the fridge.
I had some left over smoked chicken I was going to use for fajita like wraps. I like soft corn tortillas for fajitas or tacos but didn’t have any. My wife always has some wraps frozen she uses a lot for her lunches so I used two of them. I put the soup back on to heat up.
I sliced a half a red pepper and a half of an onion; they went into a skillet with some olive oil. After they had cooked a minute or so I added the chicken and seasoned with Cajun seasoning. When that had heated up good I made up the wraps; the chicken mix, some shredded cheese, shredded Romaine lettuce and sour cream.
Tasted pretty good for down and dirty! My wife even said the potato soup was extra good. I added some bacon to my soup.
