Ten Lbs Of KOA SS

Doing 10 lbs for a guy here in the park.

This is 5 lbs of pastrami SS.

Got 5 lbs of pastrami SS mixed.

Mix of assorted items, cure 1 and 1 cup water.



Let this stand for 30 mins to marry up before adding to the meat.



Mixed into the meat. Have to use my wifes KA with dough hook until i can get a nice table setup outside for my mixer and stuffers.



Out of regular zip gallons so i used a zip vac bag. Going to let this in the fridge while i get things ready for the other 5 lbs.


Going to stuff, smoke tomorrow and sat.

Very cool!

Just last night I saw an episode of Jimmy Neutron where a guy went through a portal and came back out saying, "It's an entire world made completely of pastrami." But the funny thing was he was holding what looked like a large salami.

It made me think that pastrami flavored sausage would be good.

Had some internet issues along with rain and rain and rain  :o

Finally got the pastrami SS stuffed and smoked.




Using hickory pucks.



Weather came in again.




2 darker got done faster  :o Blooming while the other catch up. Going in the fridge for a couple days.

Looks killer rick, is your Pastrami stix receipt the same as your Pastrami Summer sausage receipt cause I got your Stix receipt but really want to make some summer sausage?
