Friday Night Pasta Frittata....Plus

It was a long week for both of us. When Friday finally rolls around after a tough week we usually have a few cocktails with snacks and decide about an easy dinner. Go out, take out, or eat in with an easy meal plan. Since we had plenty of farm-fresh eggs and some leftover pasta it would be a pasta frittata with anything lurking in the fridge!
  Started by dicing and browning bacon in a pan. Pulled that, added a red onion diced, threw on a handfull of chopped kale, a couple chopped jalapenos, and 3 different sweet peppers. When that was about half done, added it to the bowl with the bacon. Added in a couple handfuls of pasta, oregano, garlic, S&P. Mixed well then added that concoction to 5 beaten eggs. Added all back to a bacon-greased pan and cooked on low for 10 minutes. Topped with shredded mozzarella,  provelone, and asiago, and into the broiler to finish. Voila!!!!!!
A very tasty, healthy, and quick satisfying meal!  Cheers!

RAD, I think their Octoberfest is alright, there sure are better but I agree with you on winterfest it's one of their best IMO!

I love the way you can open your fridge and put something like this together for a "simple" dinner. Very nice, Gene!
