A little advice about my pulled pork

Hey all,

I cannot say I have ever had this issue but it looks like my butts will be done WAY ahead of time.  My party is not until 6pm tonight.  The small butt looks to be almost at IT to pull and foil.  The larger ones probably around 11 or so.  I have a good 4-6 hours to keep them warm or let them rest, pull and stick in the fridge.  I have heard of people using a cooler to keep them hot but I am afraid I will turn them to mush! If I pull it after resting, does it reheat well in a foil pan?  All in all, I would rather have this issue than it not being done in time!

Pork butts that are not overcooked in the first place will easily keep four to six hours using the FTC method (foil, towel, cooler).  Also, yes you can re-heat pulled pork in a medium oven in a foil pan.  Keep it moist with pan juices and "toss" it occasionally.  I use 300 degrees for 30-45 minutes, covered pan.

What Hub said.  If I am ahead of schedule, I will take them off at 195 or so if  they probe tender.  If you wrapped them during the cook, open the foil & let the steam out for  about 5 mins then reseal & put in cooler.  If you did not wrap, then let them rest in a pan a few mins before foiling to go in the cooler.  This will slow the cooking process.  I have held butts in FTC for 5+ hours & they were still to hot to handle with bare hands.
