It was time to do my welcome home cook for my Memphis. So to do it right I went to the local butcher for some ribs. They were high quality for $7.99lb! I rubbed them with Zach's and into the fridge overnight. 2-1-1 method at 265F is the way I like my ribs. Loaded the tube with some Milt's to add a nice smoke flavor. Well onto the picture show...

On your 2-2-1, is your 1 just a 15 minute sear, or did I miss something? My 1 on my 3-2-1 is basically a 10-15 minute sear.

I actually typed wrong. It is 2-1-1

2 hours naked. 1 hour foiled with honey and butter. Then 1 hour naked again. All at 265F

I used the tube to add the Milt's smoke flavor. You can't run that stuff through the pellet grill.

3-2-1 is too long for the ribs I cook...gonna have to modificate my schedule to be more like your 2-1-1.
