I have the Chef's Choice and the Ken Onion Edition Work Sharp sharpeners. The Ken Onion does a much better job, is more versatile and lets you set different knife bevel angles from 15 to 30*. It would not be that hard with practice to set that 11* angle but there is not a stock guide for it. I also have the work sharp Guided Field Sharpener that I keep in the kitchen drawer for quick touch ups. I have not touched my Chef's Choice since I bought the Work Sharp units.
All that being said, there is one bad ass little Asian dude on Youtube who takes a $5 rusty junk shop knife and turns it into a scary sharp ninja tool (it's the guy with the cat). He is a fan of Bob Kramer's knife sharpening instructional videos. Kramer sells a kit but it's pricey.
