I have all Asian angled kitchen knives with angles ranging from 11-15 degrees. I have had a chef here in town sharpening them for me every few months but he's got a new job out of town and that will no longer be an option. I've gotten spoiled by him since he spent copious amounts of time on each blade.  But if I wanna keep em similarly sharp without spending a few hours a week on it I'm thinking a good adjustable angle electric sharpener is the way to go.  Any suggestions? Plenty of electric around but I'm not aware of a ton with the angles I need available.

It definitely works as advertised. An excellent investment on my part.

That's the same one I have.  Works great for me, I've never been able to really sharpen a knife before getting it.

So I'm just curious? All you guys are cool changing all your blade angles to 15?  I think most of my shuns are 15 but my katanas and Miyabi I believe are 11-14.  Anybody using the trizor on similar blades?

That thing looks intimidating. I believe the local high end kitchen shop uses one of those as their house sharpener.

I have the Chef's Choice and the Ken Onion Edition Work Sharp sharpeners.  The Ken Onion does a much better job, is more versatile and lets you set different knife bevel angles from 15 to 30*.  It would not be that hard with practice to set that 11* angle but there is not a stock guide for it.  I also have the work sharp Guided Field Sharpener that I keep in the kitchen drawer for quick touch ups.  I have not touched my Chef's Choice since I bought the Work Sharp units.

All that being said, there is one bad ass little Asian dude on Youtube who takes a $5 rusty junk shop knife and turns it into a scary sharp ninja tool (it's the guy with the cat).  He is a fan of Bob Kramer's knife sharpening instructional videos.  Kramer sells a kit but it's pricey.

I used to sell the high end Kramer stuff and while I've seen its amazing I know it's gazillions of brisket money.  Gonna check these both out for sure. I'll miss my go to guy though. He had about $1200 in stones alone and LOVED doing it. They were absolutely scalpels when they came back from him.

The amazing part of the video is at the end when he cut the maple leaf so cleanly in the water.  He turned that junk store blade into a big ass razor knife!

These Lansky systems allow different angles & they work great...but not electric - I have this and a work sharp Ken Onion. While they both work great - I use this non-electric one more often.

Its not as easy to use and takes a bit of practice,  but  you can adjust the angles for different knives instead of changing them to all be the same.
