Hmmmmm. What kinda coating is on those? My deBuyer pans didn't have any coating

Not sure what the coating is, Pappy, but all three pans had the same kind of "defect" (for lack of a better term). I've got a month to use them, so we'll see what happens. I figure as long as I keep it oiled, it shouldn't rust.
I had a coupon and broke down and got a set of all clad stainless steel. Takes some getting used to to keep things from sticking, in addition to having to relearn electric cooking. Will be switching over to gas after some more urgent purchases are made like tree removal and roof.
The pans are great and heavy, make sure you add cold oil to the hot pan and nothing has stuck so far in the 2 weeks I've been using them. I've made chicken and salmon as well as some veg stir fry. Still have my Lodge CIs for eggs and other cooks, but wanted a set of pots and pans that would last a lifetime. Also wanted a set of pans that would ensure I am the only cook in the house
Keep us posted on how you like the carbon steel, I remember Smokin Don always using them.
One of my daughters received some stainless steel pans when she got married (going on 11 years now, WOW!). I never got used to cooking on them and ended up buying her a couple of those inexpensive non-stick copper pans just so that I could fry an egg for myself when I was visiting. Never mastered the secret of stainless steel ! ! !
